Ingredients

  • 1 19 oz. can , drained and rinsed black beans
  • 1/2 C. chopped red onion
  • 1 Tbs. chopped fresh cilantro
  • 1 Tbs. diced jalapeno pepper, ribs and seeds removed
  • 1 Tbs. lime juice
  • 1/4 tsp. ground cumin
  • 1/4 tsp. chili powder
  • 1 avocado, diced
  • 1 large tomato, chopped and seeded
  • 1 minced garlic clove
  • 1 12 oz. can of kernel corn, drained or
  • 1 1/2 C. thawed frozen corn kernels
  • 1/2 tsp. salt

Combine all 11 ingredients in medium bowl. Cover and chill at least 2 hours to blend flavors.
