  • 2 8-oz. cans tomatoes with chilies
  • 1 14-oz. can corn
  • 1 16-oz. can black beans
  • 1 C. sweet onion, diced
  • 1/8 tsp. garlic powder
  • 1/8 tsp. chili powder
  • 1/2 C. fresh cilantro, coarsely chopped
  • salt and pepper to taste

Drain all canned vegetables except for one can of tomatoes. In a large bowl, combine all ingredients and toss together until blended. Cover and refrigerate if desired. Mix well before serving.
