I simply adore feta cheese, so this dish is one of my faves!

  • two 15-oz. cans black beans, drained and rinsed
  • 3/4 C. feta cheese, crumbled
  • 1/3 C. red onion, minced
  • 1/4 C. lemon juice
  • 3 Tbs. olive oil
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground pepper

Combine all ingredients together in a mixing bowl.  Toss gently.  To blend flavors, cover and refrigerate for at least 30 minutes before serving. 

Serve with: Mediterranean Chicken
