Black Bean and Feta Salad

Ingredients
- two 15-oz. cans black beans, drained and rinsed
- 3/4 C. feta cheese, crumbled
- 1/3 C. red onion, minced
- 1/4 C. lemon juice
- 3 Tbs. olive oil
- 1/4 tsp. salt
- 1/4 tsp. freshly ground pepper
Directions
Combine all ingredients together in a mixing bowl. Toss gently. To blend flavors, cover and refrigerate for at least 30 minutes before serving.
Serve with: Mediterranean Chicken
