Black Bean and Rice Burritos
- 1 C. Rice brown uncooked
- 15 oz. Black beans canned, drained
- 12 Tortilla flour, 6 inch diameter.
- 1 Tbs. Garlic clove minced
- 1 medium Tomato, (not canned) chopped
- 1/2 C. Onion chopped
- 2 tsp. Chili powder
- 1/2 C. Salsa
Cook rice and set aside. Wrap tortillas in aluminum foil and place in a 200 degree oven to warm. Put all the other ingredients with the exception of salsa in a sauce pan. Simmer for 5 minutes until tomatoes soften. Stir in the warm rice and salsa. Spread on tortilla and roll to make burrito.
