Black Bean Chili
Ingredients
- 1 1/2 lbs. boneless pork, cut into 1/2-inch cubes
- 2 15 1/2-oz. cans black beans, drained
- 1 C. chopped onion
- 1 C. chopped green bell pepper
- 1 C. thick and chunky salsa
- 2 cloves garlic, minced
- 1 tsp. chili powder
- 1/2 tsp. cumin
- 1/4 tsp. crushed red pepper
Directions
In a large skillet brown the pork with the onion and bell pepper in a little bit of olive oil. Cook until the pork is browned lightly. Combine all ingredients in the crock pot. Cover and cook on low for 7 to 8 hours. Notes: I rinse the beans a little bit too before adding.
