  • 3 C. cooked quinoa, rinsed
  • 2 C. water
  • 4 cloves garlic, chopped
  • 1 1/2 Tbsp. chili powder
  • 1 Tbsp. ground cumin
  • 1 can crushed tomatoes
  • 2 cans black beans, drained
  • 1 red bell pepper, chopped
  • 1 jalapeno pepper, seeded and minced
  • 1 tsp. oregano salt
  • black pepper, to taste
  • 1 C. frozen corn
  • 1/4 C. chopped fresh cilantro

Heat vegetable oil in a skillet and cook the onion about 5 minutes. Put in the garlic, chili powder, and cumin and cook 1 more minutes. Put this mixture in the crockpot and add the tomatoes, black beans, bell pepper, jalapeno, and oregano. Season with salt and pepper. Cook on low for 4 hours. In the last 30 minutes add the quinoa and corn. Serve with cilantro on top.
