  • 3 tsp. vegetable oil
  • 1 C. mushrooms, sliced
  • 1 C. carrots, shredded
  • 1/2 C. onion, chopped
  • 1/2 C. zucchini, chopped
  • 1 C. quick oats, uncooked
  • 1 can black beans, rinsed and rained
  • 1 C. brown rice
  • 1/2 tsp. salt
  • 1 tsp. garlic, minced
  • 1/8 tsp. black pepper

Heat 1 teaspoon oil in large non-stick skillet over medium heat. Add mushrooms, carrots, onions and zucchini. Cook for 4 to 5 minutes. Place veggies in food processor. Add remaining ingredients. Pulse for 20 to 30 seconds or until well blended. Shape 1/2 C. portions into burgers. Place patties between waxed paper. Refrigerate for at least 1 hour or until firm. Heat remaining oil in same skillet over medium-high heat. Cook patties for 3 to 4 minutes on each side. Serve on buns with desired topping.
