  • 3 C. black currants
  • ½ C. + 2/3 C. sugar
  • 1 tsp. cinnamon
  • 1 T. cornstarch
  • 2 C. flour
  • 1 tsp. baking powder
  • Dash salt
  • 1 stick butter
  • 1 large egg

Preheat oven to 375 degrees. In a large bowl, gently toss currants with ½ cup of sugar and cornstarch until evenly coated. In a separate bowl, combine flour, baking powder, cinnamon, and salt. Using a fork blend in chilled butter and egg until dough is a crumbly consistency. Press dough into a layer in a baking pan lined with parchment paper (reserve about 1 cup for the topping). Spread currants over crust and crumble the rest of the dough on top. Bake for 40-45 minutes.
