Pomi Chopped Tomatoes are so natural. The tomatoes blend very well with the different ingredients and spices in this dish.

  • 1 C. black-eyed peas
  • 2 cans salt-free chicken broth only with fresh black-eyed peas
  • 1/2 C. water
  • 1 Tbs. salt
  • 1/2 tsp. black pepper
  • 1 green pepper, chopped
  • 1 med. onion chopped
  • 2 Tbs. cumin
  • 2 Tbs. garlic
  • 1 C. cooked rice
  • 1 box of Pomi Chopped Tomatoes, drain some of juice from tomatoes use only tomatoes

Cook black-eyed peas as directed on package. Add chicken broth to a bowl. Add black-eyed peas, onion, salt and pepper. Cook the peas for about 30 minutes. Add cumin and garlic before the peas have finished cooking. Let that cook for another 15 minutes then add Pomi Chopped Tomatoes. Cook for another 15 minutes. Serve hot over rice.
