  • 1 ¾ C. chicken broth
  • ¼ C. parsley, chopped
  • ¼ C. black olives, sliced
  • 1 T. lemon juice
  • Salt and pepper to taste
  • 1 (14 oz.) can stewed tomatoes
  • 1 ¼ C. white rice
  • 1 ½ lb. boneless chicken breasts
  • 1 tsp. garlic powder
  • 1 T. paprika

Preheat oven to 375 degrees. In a baking dish, combine chicken broth, parsley, black olives, lemon juice, salt, pepper, stewed tomatoes, and rice. Cover and bake for 20 minutes. Season chicken breasts with garlic and paprika. Uncover dish, add chicken, and bake for an additional 30 minutes until chicken is cooked through.
