This delicious pumpkin soup is seasoned with pepper and would be a great side soup with a warm panini this fall.

  • 8 cups skinned and chopped pumpkin
  • 1 tablespoon olive oil
  • 1 ΒΌ chopped onion
  • 1 chopped leek
  • 1 chopped garlic clove
  • 4 cups vegetable stock
  • Black pepper

Heat the oil over medium heat in a large pan and add the onion and leek, cooking for 6 minutes. Add garlic, stock, and pumpkin to the pot and bring the pot to a boil. Season generously with black pepper. Cover the pan and simmer for 20 minutes so the pumpkin is tender. Blend the soup in a food processor in batches and season with more black pepper. Serve.
