Black Russian Pie
- 2 C. Oreo cookie crumbs, plus 2 Tbs. for garnish
- 3 Tbs. butter, melted
- 1 lb. marshmallows
- 3/4 C. milk
- 1/3 C. Kamora
- 3 C. heavy (40%) whipping cream, divided
- Whole Oreo cookies, for garnish
Combine 2 C. crumbs with melted butter; press into pie pan and chill. In a large pot over low heat, melt marshmallows with milk, stirring until completely melted. Pour into a large mixing bowl; set the bowl on ice and stir until the marshmallow mixture is cool. Stir in Kamora.
Whip 2 1/2 C. of cream to soft peaks. Slowly fold the whipped cream into the cooled marshmallow mixture. Spoon into the crust. Freeze until firm, then cover. Store in the freezer. Transfer the pie from the freezer to the refrigerator 1 hour before serving. Whip the remaining 1/2 C. cream; spread or pipe over pie. Sprinkle on the reserved 2 Tbs. Oreo crumbs; garnish with the whole cookies.
Note: Kamora is a coffee-flavored liqueur, somewhat less sweet than Kahlua.
