Ingredients
- 1 stick butter or margarine
- 2/3 C. sugar
- 2/3 C. light brown sugar
- 2 eggs
- 1 Tbs. vanilla extract
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 jar blackberry fruit spread
- 2-1/2 C. baking mix
Directions
Preheat oven to 350 degrees. Cream together butter, sugar, brown sugar, eggs, vanilla, cinnamon and nutmeg. Stir in blackberry fruit spread until well blended. Stir in baking mix 1/2 cup at a time until well blended and batter has a dense pound cake batter consistency. Butter and flour and 8 X 8 baking pan and pour in batter. Bake at 350 degrees for 40-50 minutes, until dark golden brown and knife or toothpick in center comes out clean. Slide knife or spatula around all 4 sides and remove from pan onto cooling rack. Serve warm.
