Lighten up a simple vanilla cake by topping it with fresh blackberries! The berries and powdered sugar are all the icing you need.

1 cake


  • 2 2/3 cup unsifted flour
  • 2 cup Splenda or other sweetener
  • 1/2 cup oil
  • 1/2 cup butter
  • 2 eggs
  • 1 2/3 cup buttermilk
  • 2 tsp. vanilla
  • 1 tsp. cinnamon
  • 1 1/2 tsp. baking powder
  • 7 cups fresh or frozen unsweetened blackberries
  • 1 cup sugar free powdered sugar

Preheat the oven to 350 degrees.
In a bowl, blend together eggs, sweetener, oil and butter.
Alternately, mix in flour, baking powder, and cinnamon with the buttermilk and blend well.
Add vanilla last and continue blending.
Grease a 17x11 pan and pour mixture inside.
Add the black berries on top of the batter.
Bake for 20 minutes or until done.
Sprinkle powdered sugar over the cake.
Let cool.
