Blackened Pork Tenderloin Salad
Ingredients
- 1 3/4 lb. pork tenderloin, grilled
- 1 1/2 Tbs. Cajun seasoning
- 1/2 C. grilled onions
- 1/2 C. grilled red bell peppers
- 1/2 C. grilled mushrooms
- 4 C. mixed greens
- 1 large tomato, cut into wedges
- Blue cheese dressing
Directions
Rub the pork with the seasoning. Place on the grill with the onions, peppers and mushrooms. Arrange the greens and tomato wedges on 2 large plates. Top with the sliced pork and grilled vegetables. Top with blue cheese (or your favorite) dressing.
