Blarney Scones with Sweet Orange Glaze

This recipe makes sweet Irish scones with a little bit of blarney (rhubarb)!  I created this recipe with my love of Ireland in mind. With my deep Irish heritage, I recall memories of having tea and scones with my Irish grandmother. She would often use rhubarb in her recipes and papa supplied the Blarney.

  • Scones:
  • 1 3/4 C. white flour
  • 1/2 tsp. baking powder
  • 1/4 lb. butter, softened
  • 1/4 C. sugar
  • 1 egg, slightly beaten
  • 1/4 C. milk
  • 1/2 C. finely chopped rhubarb
  • 1/4 C. chopped strawberries
  • 1/4 C. chopped walnuts
  • Glaze:
  • 1 C. confectionary sugar
  • 1 Tbs. orange juice
  • 1/4 C. finely chopped walnuts

Sift together flour and baking powder. Add butter and blend. Add sugar and mix well. Add beaten egg and milk. Add rhubarb, raisins or some nuts, if desired, mixing well to make a sticky dough. Turn dough onto floured board and knead at least 5 minutes or longer. With biscuit cutter, cut dough into rounds and place on greased baking sheet. Bake at 350 degrees for 15-20 minutes, or until brown. Cool slightly and spread glaze over each scone, sprinkle with finely chopped walnuts.
