  • 4 beets, chopped
  • 1/3 C. almonds
  • 2 arugula
  • 1/4 C. balsamic vinegar
  • ½ C. olive oil
  • 2 goat cheese
  • 1 salmon, cooked

Directions

Begin by placing the beets in a saucepan and fill it with water. Bring to boil, and let them cut for about 20 minutes. Once they are tender, set aside. Meanwhile, in a bowl, whisk together the balsamic vinegar and olive oil to make the dressing. Pour the almonds, arugula,and goat cheese on a plate. Sprinkle with the cooked beets and drizzle the balsamic vinegar and olive oil on top. Add the cooked salmon pieces to your finished salad if desired.
