  • 2 C. sharp cheddar cheese
  • 2 C. Monterey Jack cheese
  • 1 stick butter
  • ½ C. flour
  • 1 tsp. onion powder
  • 1 tsp. cayenne
  • 2 tsp. paprika
  • ½ tsp. nutmeg
  • 1 tsp. red pepper flakes
  • 4 C. milk
  • 3 C. elbow macaroni, prepared according to package directions
  • 1 C. bacon, cooked and chopped into bits

Melt butter in a saucepan over medium heat. Meanwhile, in a small bowl, mix together flour, onion powder, cayenne, paprika, nutmeg, and red pepper flakes. Once butter has completely melted, add in flour mix and cook over a low heat, stirring continuously until smooth. Add milk and remove from heat. Gradually add one cup of cheddar and one cup of Monterey Jack until melted and creamy. Stir in bacon bits. Spread a layer of your macaroni noodles in your baking dish and slowly pour a portion of the cheese sauce on top. Continue to layer noodles and sauce. Sprinkle remaining cheeses on top and bake for 30 to 40 minutes at 350 degrees. Serve hot and garnish with extra red pepper flakes if you can’t get enough heat.
