  • 2 T. butter, unsalted
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 C. mushrooms, chopped
  • ½ tsp. nutmeg
  • 1 C. water
  • 1 C. milk
  • 1/3 C. heavy cream
  • 1 T. flour
  • Salt and pepper to taste
  • Thyme, for garnish

In a large saucepan, melt butter. Sauté onions and garlic until translucent. Add mushrooms and saute until light brown. Add flour, salt, and pepper, stirring well to combine. Slowly pour in water, then milk, and simmer for 5 to 8 minutes as the mixture begins to thicken. Add in cream and nutmeg, simmering for another 3 or 4 minutes. Remove from heat and blend soup until creamy. Garnish with thyme and serve.
