  • 8 oz. uncooked tagliatelle pasta
  • 6 center-cut bacon slices
  • 2 C. grape tomatoes, halved
  • 1 (6-oz.) package baby spinach
  • 1/4 C. (1-ounce) fresh Parmesan cheese, finely grated
  • sea salt and freshly ground black pepper

Prepare the tagliatelle pasta according to package instructions. Drain when finished. Take out a large nonstick skillet and heat it over medium-high heat. Cook the bacon for about 6 minutes, which is when it should be crisp. When finished, remove from pan and crumble the bacon. Add 1/4 teaspoon salt and the tomatoes to the pan and cook for about 3 minutes, which is when the tomatoes should be tender. Remember to stir periodically when cooking. Add the spinach and tagliatelle pasta to the pan. Cook and stir for about 1 minute, which is when the spinach should begin to wilt. When finished, transfer the pasta into a bowl. Sprinkle with bacon, pepper and Parmesan cheese and serve.
