Blue Boar Inn Pork Tenderloin
Ingredients
- 1 C. Pineapple Juice
- ½ C. Olive oil
- 2 Garlic Cloves- Chopped
- 1 Shallot (Medium)-Chopped
- 1 Tsp. Salt
- 4 Tsp. Cracked Peppercorns
- 2 Tbs. Basil-Chopped
- Rind of one orange
- 4 Pork Tenderloins
Directions
Combine all marinade ingredients in a glass or stainless steel container. Clean and trim your pork tenderloins. Marinade each tenderloin for a minimum of three hours or overnight if possible. Remove from marinade and sprinkle with fresh cracked peppercorns. Sear in a hot pan with a little olive oil until brown on both sides. Bake in oven at 400 degrees for 8 to 10 minutes. Let rest for 2 minutes, then slice on angle.
