  • 1 C. romaine lettuce, chopped
  • 1 C. regular lettuce, chopped
  • 2/3 C. walnuts
  • 1 tomato, sliced
  • 2 oz. mild blue cheese
  • 1 Tbs. cider vinegar
  • 2 tsp. Dijon mustard
  • 1/4 tsp. kosher salt
  • Freshly ground black pepper
  • 3 Tbs. extra-virgin olive oil

Place lettuces in large salad bowl. Add walnuts, tomato and blue cheese. For dressing, mix vinegar, mustard, salt and pepper in a blender until creamy. Pour dressing over salad mixture and toss well to coat salad.
