Blue Cheese Spread

Easy and delicious, served with crackers and onion jam.

Ingredients

  • 8 oz. soft blue cheese, at room temperature
  • About 1/2 C. whipping cream
  • Fresh-ground pepper

Directions

In a small bowl, stir blue cheese to break up slightly. Gradually stir in 1/2 C. whipping cream; if mixture is too stiff, add more cream as desired. Add pepper to taste. Spoon into a serving bowl.

Note: Look for a soft, crumbly blue cheese with no rind, such as Point Reyes. Serve with crackers and purchased onion jam. You can make the spread up to 2 days ahead; cover and chill. Let it come to room temperature before serving.
