This taco salad can be a great snack or even a tasty lunch!

  • 3 C. cooked ground turkey
  • 1/2 C. canned black beans
  • one 7-oz. bag blue corn tortilla chips
  • one 9-oz. bag mixed greens
  • 1/2 C. frozen roasted corn, thawed
  • 1 C. fresh diced tomatoes
  • 1/2 C. chopped fresh avocado
  • 1/4 C. chopped onions
  • 1 C. shredded Mexican cheese blend
  • 1/2 C. sour cream
  • cilantro dressing

Preheat oven to 300 degrees, then place tortilla chips in the oven for about 5 minutes.  Heat meat and black beans in the microwave or oven.  Place lettuce in the bottom of a large serving bowl, then add corn, tomatoes, avocados, and onions.  Top with warm chips, meat, and black beans. Sprinkle with cheese and place a dollop of sour cream on top.  Pour dressing on top and toss.
