Blue Corn Chip Taco Salad
Ingredients
- 3 C. cooked ground turkey
- 1/2 C. canned black beans
- one 7-oz. bag blue corn tortilla chips
- one 9-oz. bag mixed greens
- 1/2 C. frozen roasted corn, thawed
- 1 C. fresh diced tomatoes
- 1/2 C. chopped fresh avocado
- 1/4 C. chopped onions
- 1 C. shredded Mexican cheese blend
- 1/2 C. sour cream
- cilantro dressing
Directions
Preheat oven to 300 degrees, then place tortilla chips in the oven for about 5 minutes. Heat meat and black beans in the microwave or oven. Place lettuce in the bottom of a large serving bowl, then add corn, tomatoes, avocados, and onions. Top with warm chips, meat, and black beans. Sprinkle with cheese and place a dollop of sour cream on top. Pour dressing on top and toss.
