This recipe makes 2 loaves of yummy zucchini bread, 12 slices per loaf. This recipe rates number one in my family and I'm sure you will award it a blue ribbon after trying it too.

Ingredients

  • 3 eggs, beaten
  • 1/2 C. granulated sugar
  • 1 C. brown sugar
  • 1/2 C. oil
  • 3 tsp. maple flavoring
  • 2 C. zucchini, coarsely chopped
  • 2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1/2 C. reg. wheat germ
  • 1/2 C. walnuts, chopped
  • 2 1/2 C. flour
  • 1/3 C. sesame seeds

Directions

Preheat oven to 350 degrees. Beat together eggs, sugars, oil and maple flavoring until foamy and thick; stir in zucchini. Add baking soda, baking powder, salt, wheat germ and flour; mix well. Add nuts. Spoon batter into 2 (9x5 inch) greased and floured loaf pans. Sprinkle tops with sesame seeds. Bake 45 minutes to 1 hour (until toothpick inserted comes out clean). Cool for 10 minutes before removing from pans.
