Blueberry Banana Bread

Blueberry Banana Bread

This is a great twist on a basic bread.

Ingredients

  • 2 C. all-purpose flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 C. sugar
  • 1 egg, beaten
  • 1/2 C. vegetable oil
  • 1 tsp. vanilla extract
  • 2/3 C. mashed bananas
  • 1 C. fresh blueberries
  • 1/2 C. chopped nuts

Directions

Preheat the oven to 350 degrees. In a large bowl, combine flour, salt, baking soda and sugar. In a separate bowl, combine egg, oil, and vanilla extract and mix. Add to dry ingredients. Fold in bananas and blueberries and mix well. Add nuts and mix. Pour into a greased loaf pan and cook at about 1 hour. Allow bread to cool before slicing.

  • I doubled this recipe and it came out great! I did add a bit - not much - of cinnamon, not wanting to overpower the bananas, just enough to compliment the banana flavor. This is a 'keeper' for the 'bake a little something as a show my appreciation' gift, i.e. teacher, neighbor, etc.
