This delicious cake is made with swirls of honey, cinnamon, and fresh blueberries. Serve on its own or top it off with a scoop of vanilla ice cream.

  • 1 C. white sugar
  • 1 C. honey
  • ½ C. vegetable oil
  • 4 cage-free eggs
  • 2 tsp. grated orange zest
  • 1 C. fresh-squeezed orange juice
  • 2 ½ C. flour
  • 3 tsp. baking powder
  • ½ tsp. kosher salt
  • 1 tsp. ground cinnamon
  • 1C. fresh blueberries

Preheat oven to 350 degrees F and coat a 9x13-inch baking ban with non-stick cooking spray.

All together, sift flour, baking powder, baking soda, salt and cinnamon.

Mix sugar, honey, vegetable oil, eggs and orange zest in a large bowl. Alternately, beat in flour mixture and orange juice. Transfer batter to prepared baking pan.

Bake for 50 minutes. Insert a toothpick at the center of the cake and see if it comes out clean to test readiness. Set cake aside to cool. Once cake has cooled, top with blueberries and serve.
