Blueberry Muffins

This is an unusual way to make muffins, but it keeps the carbs and the fat low. Still delicious.

Ingredients

  • 1 slice bread, made into crumbs
  • 1/3 C. instant non-fat dry milk
  • 1/2 tsp. baking soda
  • 1 Tbs. water
  • 1 egg, separated
  • Artificial sweetener to equal 2 tsp. sugar
  • 1/2 C. blueberries

Directions

Place crumbs, dry milk and baking soda in bowl. Add water, egg yolk, sweetener and blueberries. Mix. Beat egg whites until stiff and fold into bread crumb mixture. Pour into non-stick muffin tins and bake at 350 degrees for 12-15 minutes.
