This is one one of my favorite breads to snack on while drinking my morning coffee. Baked with fresh blueberries and orange-juice, this delicious bread is perfectly moist and incredibly flavorful.

  • 1 C. fresh blueberries
  • 2 T. flour + 1 3/4 C. flour
  • 2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1/3 C. butter-flavored Crisco
  • 2/3 C. sugar
  • 2 eggs
  • 1 C. orange juice
  • 2 T. powdered sugar, for topping

Preheat oven to 350 degrees. Toss the washed blueberries with 2 tablespoons flour. Set aside. Sift the remaining flour, baking powder, baking soda and salt together. Set aside. In large bowl, cream the Crisco and gradually beat in the sugar until fluffy. Beat in the eggs, one at a time. Add the flour mixture alternately with the orange juice, stirring until blended. Stir in the blueberries. Pour mixture into greased loaf pan. Bake for 50-60 minutes or until an inserted toothpick comes out clean. Top with powdered sugar before serving.
