  • 1 C. all-purpose flour
  • 1 Tbs. sugar
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 egg, beaten
  • 1 C. buttermilk
  • 1 Tbs. canola oil
  • 1 tsp. vanilla
  • 1 C. fresh blueberries
  • Unsalted butter for cooking
  • Maple syrup:
  • 2 Tbs. all-purpose flour
  • 1/2 C. packed brown sugar
  • 1/2 C. white sugar
  • 1 tsp. vanilla extract
  • 1 C. water

Combine flour, baking powder, soda and salt in a bowl until well-mixed. In another bowl, mix egg, buttermilk, oil and vanilla. Pour in dry mixture. Whisk until thick. Heat butter on a skillet over medium-high heat. Pour 1/4 C. batter into circle. When pancakes start to bubble, add handful of blueberries to each pancake. Wait to flip until golden brown. 

For cinnamon maple syrup, mix flour and sugars in saucepan. Stir ingridents. Add water and vanilla. Wait until mixture reaches boil and continue stirring until thick. Remove from heat. Let it cool for at least 10 minutes before drizzling over pancakes.
