  • ½ cup quinoa
  • 1 cup vegetable stock
  • ½ cup roasted hazelnuts
  • ¾ cup blueberries
  • 5 ounces mixed salad greens
  • Lemon vinaigrette

Use a strainer to rinse the quinoa with cold water and then add the quinoa to a pan. Add the vegetable stock and bring the quinoa to a boil with high heat. After the quinoa boils, reduce the heat to low and simmer for 15 minutes with the pan covered. Remove from heat and allow it to cool. Top the mixed greens with the quinoa, blueberries and hazelnuts. Drizzle in lemon vinaigrette, or the dressing of your choice.
