Bob Evans Copycat Canadian Bacon Hash

- 4 C. diced potatoes
- 1/4 C. chopped onion
- 1 C. chopped Canadian bacon/ham
- 1/4 C. chicken broth
- 2 Tbs. olive oil
- 1/4 tsp. celery seed
- 1/2 tsp. freshly ground black pepper
- 3/4 tsp. salt
Place the potatoes into a medium saucepan, and cover with water. Bring to a boil over high heat, then reduce the heat, and simmer for 5 minutes. Drain.
Then, heat oil in a large skillet over medium heat. Cook the bacon for 4 minutes, then add in the onion and cook until translucent. Stir frequently. Add the potatoes, salt, celery seed, and pepper to the bacon; cook 4 minutes, stir occasionally. Lastly, stir in the chicken broth. Stir until liquid is absorbed into the potatoes.
