Ingredients

  • 1 1/2 lb. coarse grind beef chuck
  • 2 links sweet Italian sausage, cut in 1/4 in. pieces
  • 2 links hot Italian sausage, cut in 1/4 in. pieces
  • 1 Tbs. vegetable oil
  • 3 med. onions, chopped
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1 bunch green onions, chopped, use some green
  • 10 medium mushrooms, sliced
  • 2 large celery stalks, chopped
  • 1 15 oz. can chopped tomatoes
  • 2 cans tomato sauce, 7 oz.
  • 1 15 oz. can red kidney beans
  • 1 15 oz, can chili beans
  • 1 15 oz. can pinto beans
  • 1/2 C. ketchup
  • 1/2 C. tomato juice
  • 1/2 can beer
  • 1 Tsp. pepper
  • 1 Tbs. chili powder
  • 3 drops hot sauce    
  • 1/2 Tbs. garlic powder
  • 1 Tbs. seasoned salt  
  • 1 tsp. dill weed

Directions

Brown chuck and sausage in vegetable oil. While browning, toss in onions, mushrooms, celery, including a few chopped up celery leaves.  Sprinkle with season salt, chili powder, and garlic powder while browning. After browning, add all canned items and other veggies and ingredients, including the other spices. Simmer 1 1/2 hours. Add beer for last 1/2 hour of simmer.

Serves 6-8 handily.
