Bob's Herbed Garbanzo Bean Spread

This delicious dip goes fat, so make enough for a crowd. Serve with crackers, carrots sticks, or apple slices.

Ingredients

  • 1 (15.5 oz.) can garbanzo beans, drained
  • 1 garlic clove, chopped
  • 1-1/2 Tbs. fresh lemon juice
  • 4 Tbsp olive oil (more or less to whatever consistency you desire)
  • 3/4 tsp. dried oregano
  • 3/4 tsp. dried thyme
  • 1/2 tsp. chili powder
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground pepper

Directions

Process all ingredients in a food processor until smooth, stopping to scrape down sides. Yield: 1-1/3 C. I have doubled and tripled this recipe. I like it served with Stoned Wheat Thins and/or Triscuits. It is also good with carrot sticks and/or apple slices.
