Stir fry is the easiest thing to whip up after a long day. This simple dish is full of flavors complemented by the bright undertones of the ginger. The chicken is a simple addition but adds a layer of texture to the stir fry.

  • 1 lb. chicken breast, cubed
  • 2 tsp. garlic, minced
  • 2 tsp. ginger, finely chopped
  • 1 C. chicken broth
  • 3 Tbs. soy sauce
  • 2 tsp. sugar
  • 2 C. broccoli florets
  • 2 tsp. cornstarch

Heat a skillet on high heat and add in olive oil. Cook the chicken, garlic, and ginger until the chicken is brown (about 5 minutes). Add in the broth, reserving ΒΌ cup. Stir in the sugar and soy sauce. Mix in the broccoli and cover the skillet. Cook until the chicken is done all the way through. Whisk the cornstarch and remaining chicken broth together well. Pour into the skillet and stir until it thickens. Cook for an additional two minutes and enjoy.
