  • 1 ½ C. all-purpose flour
  • 1 ⅓ C. sugar
  • 1 C. whole milk
  • 2 eggs, room temperature
  • 6 Tbs. unsalted butter, room temperature
  • 1 Tbs. baking powder
  • ¼ tsp. salt
  • ½ tsp. vanilla extract
  • Mascarpone Frosting
  • 1 ⅓ C. heavy whipping cream
  • ⅓ C. confectioner's sugar
  • 14 oz. mascarpone cheese
  • 3 ½ Tbs. coffee liqueur
  • Espresso powder, garnish
  • Cocoa powder, garnish

Preheat the oven to 375 degrees. Beat the butter, sugar, flour, baking soda and salt together. In a separate bowl combine the milk, vanilla, and eggs. Slowly add these wet ingredients and blend them. Pour the batter into a muffin pan. Bake for 15-20 minutes Whisk all of the frosting ingredients together and set aside or put it into a piping bag. Once the cupcakes are done, inject some of the mascarpone cream into the cupcakes and frost them with the rest. Sprinkle the espresso and cocoa powder on top.
