  • 1.8 lb Ground Beef
  • 1 Garlic Clove, minced
  • 1 Small Yellow Onion, finely chopped
  • 1 tbs Kosher Salt
  • ¼ tsp Freshly Ground Black Pepper
  • ¼ C Green Onions, finely chopped
  • 2 tbs Parsley, finely chopped
  • 2 tbs Tomato Paste
  • 2 large Eggs
  • 1 ½ C Breadcrumbs
  • ½ C Water
  • Olive Oil, for brushing
  • 3 large Eggs, hard-boiled & peeled

Begin this recipe by preheating your oven to 482 degrees. Combine the ground beef, garlic, onion, salt, pepper, green onions, parsley, tomato paste, two whole eggs, breadcrumbs, and water in a large bowl. Use your hands to mix the ingredients together fully.

Divide the mixture into three separate loafs. Shape the loafs as you would a regular meatloaf. Carve out a small part of the meat for your hardboiled egg. Stuff one egg into each loaf. Cover the hole with the meat and then set onto a greased baking sheet. Brush the tops and sides of the loafs with olive oil and bake for about 20 minutes or until golden on the outside and cooked through. Serve with sides of your choice!
