  • 1 lb. pasta
  • 2 tablespoons of olive oil
  • 2 carrots, diced
  • ½ lb. of shredded mozzarella
  • Half an onion, diced
  • 1 lb. of leftover ground beef
  • 1 can of leftover red pasta sauce
  • 1 tablespoon of oregano
  • Season with salt and pepper
  • Basil leaves, for garnish

Preheat the oven at 350F.
In a large pot, cook the pasta in boiling, salted water for 8 to 10 minutes or until it is al dente. Make sure to drain the pasta. Set the pasta aside.
In separate pot, drizzle a good amount of olive oil and add the carrots and onions. Cook the vegetables until they become translucent. Add the ground beef and stir well with the vegetables. Cook the ground beef until it becomes brown.
Once the beef has fully cooked, add the red pasta sauce and season with salt, pepper and oregano. Stir the meat mixture well and cover it up with a lid. Let the meat simmer for 15 minutes or until the liquid is dried out. Make sure to taste the meat mixture every now and then and season if necessary.
In a large baking dish, pour a thin layer of the meat mixture. Then, carefully add all of the pasta. Pour the remaining sauce over the pasta. Top the dish off with shredded mozzarella cheese. Cover it up with foil and bake for 20 minutes. Remove the foil and bake for another 8-10 minutes or until the dish is golden brown.
