  • 1/4 C. olive oil
  • 1 onion, chopped
  • 1 branch celery, chopped
  • 1 garlic clove, chopped
  • 1/2 lb. ground beef
  • 1/4 C. ground chicken liver
  • 1/4 C. flour
  • 2 Tbs. tomato paste
  • 1 beef bouillon cube
  • 1 1/4 C. water
  • 1/4 C. dark sherry or marsala
  • pinch oregano
  • pinch paprika
  • pinch mace
  • salt
  • pepper

Heat the oil in a pan and sauté the onion, celery and garlic for 5 minutes until lightly browned. Add the ground beef and liver and cook for another 5 minutes. Sprinkle in the flour and cook for 1 minute. Stir in the tomato paste and cook for 1 minute more. Dissolve the beef bouillon cube in the water and add the liquid to the pan with the sherry or marsala. Add the oregano, paprika, mace and seasoning and simmer for a further 15 minutes.
