A great way to use leftover mashed potatoes- really good the next morning to serve with breakfast!

  • 1 1/2 C. mashed potatoes
  • 1 egg, well beaten
  • 2 Tbs. minced onion
  • flour
  • cooking oil

Add the beaten egg, onion, and salt/pepper to mashed potatoes, and gradually add flour to bind the mixture together (I usually end up using about 2 tablespoons). Heat the oil and spoon large spoonfuls of mixture into the hot oil. Brown on each side. Drain on paper towels.
