  • 5 tablespoons butter
  • 1⁄4 cup whole wheat flour
  • 1⁄4 teaspoon salt
  • 1 cup half-and-half cream
  • 4 ounces cream cheese
  • 2 tablespoons minced onions
  • 1 tablespoon minced garlic
  • 2 (10 ounce) boxes frozen chopped spinach, thawed
  • 1⁄4 cup water
  • 1⁄4 cup grated parmesan cheese

Melt 3 tablespoons of butter in a saucepan over medium low heat. Stir flour and salt into the saucepan until it is all blended together. While slowly stirring the cream, stir in cream cheese and increase heat to medium. Continue to whisk mixture until it becomes thick and smooth and then remove it from heat. In a saucepan over medium-high heat, saute onions and garlic in remaining butter until transparent. Reduce the heat to low and add spinach and water. Cook and periodically stir for 8 minutes. Add prepared sauce and Parmesan cheese into pan and stir until completely mixed. Serve.
