Boston Pancakes

Ingredients
- 2 C. all-purpose flour
- 1 tsp. salt
- 1 tsp. sugar
- 2 tsp. baking powder
- 2 eggs
- 1 1/2 C. milk
- 2 Tbs. butter, melted
- 2 Tbs. oil
- 1/4 lb. butter
- 1/3 C. maple syrup
Directions
Sift the flour, salt, sugar and baking powder in a bowl. Stir in the eggs, milk and melted butter. Stir briefly, but do not overmix as it makes the pancakes heavy. In a large skillet, heat 1 Tbs. oil. Pour in enough batter to make pancakes 5 inches in diameter, 1/4-inch thick. When bubbles appear on the surface and the underneath is brown, turn and cook for 3 minutes. Continue to cook the batter adding a little oil as needed to prevent the pancakes from sticking. Serve the pancakes with the butter and maple syrup.
