Bow Tie Pasta with Chicken and Vegetables
- 3 C. bow tie pasta
- 2 cloves of garlic, minced
- 2 skinned and boned chicken breast halves, cut 3/4 inch pieces, salt and pepper to taste
- 2 C. vegetables (broccoli, corn and peppers)
- 1 C. skim milk
- 3 Tbs. all purpose flour
- 1/4 tsp. ground pepper
- 1 C. chicken broth
- 1/2 tsp. salt
- 1/2 C. Parmesan cheese
Mix flour with small amount of milk. Add mixture to rest of milk and chicken broth in 1 1/2 quart saucepan. Cook on medium heat, stirring often. When sauce has thickened add 1/4 C. Parmesan cheese, stir. Cook pasta in 2 1/2 quart saucepan. After approximately 6 minutes, add vegetables and allow to cook for 3 minutes longer. Drain.
While pasta and sauce are cooking, cook garlic and seasoned chicken in skillet on medium heat. Cook 5-6 minutes or until chicken is done. Combine chicken and sauce with pasta and vegetables. Garnish with remaining Parmesan cheese.
