Bowties with Sausage and Peppers
Ingredients
- 8 oz. bow-tie pasta (farfalle)
- 12 oz. spicy Italian sausage links, cut into 1-inch pieces
- 2 medium red bell peppers, cut into 3/4-inch pieces (or use green, yellow and/or orange peppers)
- 1/2 C. vegetable or beef broth
- Freshly ground pepper to taste
- 1/4 C. snipped Italian parsley (flat leaf parsley)
Directions
Cook pasta according to package directions, preferably al dente (firm to the bite). Drain and keep warm. Meanwhile, in a large skillet cook sausage and sweet peppers over medium-high heat until sausage is brown. Drain fat. Stir in the vegetable or beef broth and pepper into sausage mixture. Bring to boiling; reduce heat. Simmer, uncovered, for 5 minutes. Remove from heat. Pour the sausage mixture over pasta; add parsley. Toss gently to combine.
