  • 2 lb. beef tips
  • 6 oz. fresh mozzarella, sliced
  • 1 ½ C. dry red wine
  • 1 C. pitted prunes
  • 1 C. white mushrooms, sliced
  • ½ C. beef stock
  • 2 cloves of garlic, minced
  • 1 yellow medium onion, chopped
  • 2 tsp. ground ginger
  • ¼ tsp. Ground cinnamon
  • Salt and pepper to taste
  • Olive oil for cooking

Drizzle the meat with olive oil and sprinkle it with salt and pepper. In a large skillet, brown the beef on medium-high and set aside. Toss the onion, mushrooms, prunes, ginger, cinnamon, and garlic. After about 7 minutes, add in the wine and stock (also more salt and pepper if needed). Add the beef back in and bring it to a boil. Once it starts boiling, bring it down to a simmer and continue to cook for 2 hours until the meat is tender. Place the cheese on top for the last 5 minutes so it becomes melty.
