Brandied Pumpkin Soup

Ingredients
- 1 Tbs. unsalted butter
- 2 tsp. ground cumin
- two 15-oz. cans pumpkin
- 2 tsp. ground coriander
- 1 C. diced yellow onion
- 2 tsp. kosher salt
- 1/2 C. diced celery
- 1 tsp. black pepper
- 1/2 C. diced carrots
- 10 C. chicken stock or vegetable stock
- 1 Tbs. chopped garlic
- 1 C. heavy cream
- 1 C. Korbel XS Brandy
Directions
Melt butter in soup pot. Add onion, celery, carrots and garlic. Cook until soft. Add brandy and seasonings and simmer for 10 minutes. Add stock, heavy cream and pumpkin and simmer another 20 minutes, stirring frequently. Remove from heat and puree in blender. Reheat before serving. Serve in bowls as a soup course or in espresso cups as an appetizer.
