Enjoy a classic rice and beans dish with much more flavor that anything store-bought. These beans are tossed with crispy bits of bacon that have been cooked in a buttery garlic sauté blend!

  • 2 C. dry red or pinto beans
  • 6 strips bacon, chopped
  • 1 onion, diced and divided
  • 3 cloves garlic, minced and divided
  • ½ stick butter, divided
  • 2 C. white rice
  • Salt to taste
  • 1 tsp. lemon juice

In a saucepan, cover beans with water and bring to a boil. Remove from heat, cover, and set aside for an hour to soak. In a skillet, melt 2 tablespoons of butter and sauté half of your onion and half of your garlic with bacon until everything has been cooked through. Drain beans, add them into the skillet, season with salt, and mix well to evenly combine. Prepare rice by melting butter in a separate skillet, sauté remaining onion and garlic until fragrant, and add in rice. Stir constantly as rice begins to become translucent. Pour in 3 cups of water and lemon juice; steam until liquid has been absorbed and rice is tender.
