A fresh, crisp salad filled with cucumbers, onion, tomatoes and bread.

  • 4 1-inch thick slices of Italian bread, toasted
  • 2 lg. tomatoes
  • 2 sm. cucumbers, sliced
  • 3 slices red onion, chopped
  • 4 fresh basil leaves, torn into small pieces
  • 1/4 C. virgin olive oil
  • 2 Tbs. white vinegar
  • salt
  • pepper
  • 8 ice cubes

Break bread into bite-size pieces and put them in a bowl. Sprinkle with 1/4 C. cool water. Add tomatoes, cucumbers, onion and basil. Drizzle with oil and vinegar. Season to taste with salt and pepper. Toss. add ice cubes and let stand for 15 minutes. Toss again. Serve.
