Bread and Tomato Salad

Ingredients
- 4 1-inch thick slices of Italian bread, toasted
- 2 lg. tomatoes
- 2 sm. cucumbers, sliced
- 3 slices red onion, chopped
- 4 fresh basil leaves, torn into small pieces
- 1/4 C. virgin olive oil
- 2 Tbs. white vinegar
- salt
- pepper
- 8 ice cubes
Directions
Break bread into bite-size pieces and put them in a bowl. Sprinkle with 1/4 C. cool water. Add tomatoes, cucumbers, onion and basil. Drizzle with oil and vinegar. Season to taste with salt and pepper. Toss. add ice cubes and let stand for 15 minutes. Toss again. Serve.
