Bread Machine Recipes
Ingredients
- 1 1/2 lb. LOAF OR 2 lb. LOAF
- Total Liquid = 1 1/8 - 1 1/2 C. OR 1 1/3 - 2 C.
- Flour = 3 - 3 1/2 C. OR 4 - 4 1/2 C.
- Gluten = 1 - 6 tsp. OR 2 - 8 tsp.
- Fat = 0 - 8 Tbs. OR 0 - 10 Tbs.
- Sweetener = 0 - 4 Tbs. OR 0 - 6 Tbs.
- Salt = 1/2 - 1 1/2 tsp. OR 1/2 - 3 tsp.
- Yeast = 1/2 - 4 tsp. OR 1 - 5 tsp.
- Fruit/Nuts = 1 1/2 - 2 C. OR 2 - 3 C.
Directions
Tips:
1. Use 3 oz. liquid to each 1 C. flour
2. Eggs & honey count as liquid ingredients
3. Add more yeast with a recipe that has cheese or fruit added
4. Add more gluten if using whole wheat or specialty flour
5. Whole wheat flour soaks up more liquid than white flour
6. Egg breads rise higher & are more delicate than non-egg breads
7. Certain breads, like brioche, can have three times the fat
8. Breads with more sweetening brown faster
9. A recipe that will be baked in a regular oven can have more flour, so you can make a larger loaf than in a bread machine.
