This delicious bread pudding recipe is crisp on the top and creamy in the inside. It's the perfect dessert any time of year.

Ingredients

  • cooking spray
  • 1 C. cubed day-old French bread (toasted if bread is fresh)
  • 1 C. skim milk
  • 1/2 tsp. reduced-calorie margarine
  • 1/2 tsp. grated orange zest
  • 1/2 Tbs. chopped dried cherries (no sugar added)
  • 1/8 tsp. vanilla extract
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. sugar substitute, or to taste
  • 2 Tbs. egg substitute

Directions

Preheat oven to 375 degrees. Lightly coat two 2-cup souffle dishes with cooking spray.

Divide bread cubes between prepared dishes. In a small saucepan, combine the milk and margarine. Scald the milk. Remove from heat and stir in the orange zest, cherries, vanilla extract, cinnamon, sugar substitute and egg substitute. Pour over bread cubes.

Place souffle dishes on a baking sheet since mixture may bubble over. Bake for 20 minutes, until top is crisp and knife inserted in the center comes out clean. Serve warm.
